Food Testing Labs in Mumbai: How to Choose the Right NABL Lab for Your Food Brand (2026)

Every packaged food brand in India needs lab reports: to support the nutrition table on your label, to prove the product is safe, to justify your best-before date and, increasingly, to get listed on marketplaces and quick commerce. Mumbai has many food testing labs, but they differ a lot in what they are accredited for. Here’s how to choose.

Which tests does a new food brand usually need?

  • Nutritional analysis: energy, protein, carbohydrates, sugars, fat and other values printed on your label
  • Microbiological testing: total plate count, yeast and mould, coliforms and pathogens relevant to your product
  • Contaminants: heavy metals, and pesticide residues or aflatoxins for grains, nuts, spices and plant-based products
  • Shelf-life study: real-time or accelerated testing to support your best-before date
  • Claim-specific tests: anything you print as a claim (“high protein”, “no added sugar”, “gluten free”) needs data behind it

NABL accredited vs FSSAI notified: what’s the difference?

NABL accreditation (to ISO/IEC 17025) means the lab’s quality system and specific test methods have been independently assessed. Accreditation is per test and per product group, not blanket, so always check that the tests you need are in the lab’s accredited scope.

FSSAI-notified labs are NABL-accredited labs that FSSAI has recognised for testing under the Food Safety and Standards Act. For routine product testing a NABL-accredited lab is usually enough; for regulatory or dispute cases, a notified lab may be required.

You can check both on the official FSSAI and NABL websites. Don’t rely on a logo on a lab’s brochure.

How to choose between labs

  1. Check scope, not just accreditation. Ask for the accreditation scope document and confirm your product category and tests are covered.
  2. Ask for turnaround times for each test. Microbial tests take days; shelf-life studies take weeks to months.
  3. Compare quotes test by test. Packages can include tests you don’t need or miss ones you do.
  4. Check sample requirements: quantity, packaging and how samples should be sealed and delivered.
  5. Look at the report format. Marketplaces and buyers want clear, signed reports that name the method used.

Shelf-life studies, briefly

A real-time study stores your product in normal conditions and tests it at intervals until it fails. An accelerated study uses higher temperature and humidity to estimate shelf life faster. Many brands launch with an accelerated estimate and confirm it with real-time data. Plan this early: it’s often the longest step before launch.

Common mistakes

  • Printing a nutrition table from an online calculator instead of a lab report
  • Testing a lab sample, then changing the recipe or supplier for production
  • Choosing the cheapest lab without checking its scope
  • Skipping retesting when you change the formula, packaging or manufacturer
